15 Meal Prep Ideas for Busy Students

One thing I've always wanted to be better at is meal prepping so I eat out less and stay with a healthy diet. My meal prep board on Pinterest is filled with plenty of options, so I figured it was time to actually get down to business and figure this whole thing out.

If you're looking for even more inspiration, make sure to give the websites I link below some love!

Breakfast

Caramel Macchiato Overnight Oats

Via Desserts with Benefits

I'm a sucker for an iced caramel macchiato from Starbucks when I want to treat myself, but I definitely can't convince myself that there's anything super healthy for me in there. While perusing the web for meal prep inspiration, I came across these yummy-looking overnight oats themed around my favorite coffee beverage.

If anything involves a ton of fruit, you can bet I'm here for it. If you follow me on Instagram, you'll know that I eat fruit salads all the time or that I'm snacking on some sort of fruit while studying or writing. I definitely want to get more into acai bowls, as well, so the combination of everything in this breakfast is perfect for the morning.

Blueberry Almond Energy Bites

Via Sweet Peas and Saffron

Energy bites are one of my favorite ways to fill myself up for the breakfast, or even for a mid-morning snack to hold you over until a later lunch. Like I mentioned above, I love fruit, and blueberries are my favorite, so these are the perfect combination for anybody who needs something quick and healthy.

Raspberry Dark Chocolate Chip Overnight Oats

I think that overnight oats are one of the best things you can prep for your breakfasts. They're quick and easy to put together, and you can make so many different flavors so you never get bored of them. The dark chocolate in these overnight oats will help you satisfy your sweet tooth in a healthier way.

Banana Chocolate Chip Energy Bites

Here's another simple recipe for energy bites, this time packed with bananas and chocolate chips. If you couldn't tell, I'm a big fan of finding ways to stay healthy while still getting something sweet in--what can I say, I'm a sucker for anything sugary.

Lunch

Spicy Chicken Ranch Quesadillas

Via Recipes Instant
If you can't tell yet, I have a lot of guilty pleasure foods, and quesadillas are one of them! Whenever I'm at a loss for what to eat while at work serving, I'll fall back onto our chicken quesadillas--yum!

Meal-Prep Garlic Chicken and Veggie Pasta

Via Tasty
Chicken, veggies, and pasta? Yes, please! My favorite thing about meal prepping pasta is how fast you can reheat it, so you can quickly have your lunch and then get back to work.

Greek Chicken Bowls

Via Easy Peazy Mealz
I recently tried tzatziki sauce with a Greek chicken wrap I had while out for dinner a few weeks ago, and now I'm on the lookout for recipes that have it, just like this one. Get your fill of veggies and chicken with these bowls.

Roasted Chicken and Sweet Potato

Via Eat Well 101
To continue my rant in this blog about how many different foods I'm obsessed with, let's add sweet potatoes to the list. You can cook them in so many different ways and keep your meals exciting so you don't get bored of them.

One Pan Healthy Italian Sausage and Veggies

Via Chelsea's Messy Apron
Something besides chicken, hallelujah! (Honestly, I love chicken, as you can tell, but I'm sure other people need a bit more variety in their diets.) There are tons of great vegetables in here, and you can easily sub in other veggies that you like.

Dinner

One Pan Baked Teriyaki Salmon and Vegetables

Via Creme de la Crumb
If you want something filling for dinner after a long day, this salmon meal prep is perfect for you. Salmon is one of my favorite types of fish, so this meal is something that's perfect to treat myself with.

Shrimp Burrito Bowls

Via Gimme Delicious
Why pay for an expensive burrito bowl that's not super great for you when you can make one at home? Like a lot of these meal prep recipes, there's a lot of room for variations in this one, such as adding in spices and different vegetables.

Honey Lemon Chicken Bowls

Via Gimme Some Oven
I've made this recipe before, and it's so delicious for how easy it is to make. This is something that when I reheated it in the student org office while in undergrad, people would stop by my desk to ask what smelled so good.

Teriyaki Chicken and Broccoli

This is another quick meal prep recipe that'll satisfy your taste buds from the first bite. Teriyaki sauce is something I've been obsessing over recently, so this is perfect for that punch of flavor.

Lemon Roasted Salmon with Sweet Potatoes and Broccolini

Via Little Spice Jar
Anything lemon-roasted is something I want to eat. Add in some sweet potatoes, and I'm completely sold!

Rachel
